Un PDF descrive come va dipinta una pagina. Sotto il cofano non contiene titoli, paragrafi e celle di tabella: contiene istruzioni per mettere glifi a certe coordinate. Questa asimmetria spiega perché scrivere un PDF è facile e rileggerlo non lo è, e perché qualsiasi convertitore che prometta un'andata e ritorno impeccabile sta esagerando.
Questi strumenti sono costruiti attorno a ciò che si può davvero recuperare. Le immagini di pagina escono esatte, perché renderizzare è l'unica cosa per cui un PDF è progettato. Il testo esce in modo affidabile. La struttura — tabelle, colonne, stili — esce bene quanto lo consente l'impaginazione interna del file di partenza: ottima per un PDF esportato da Word e grezza per uno prodotto da uno scanner.

Why is my converted Word file not identical?
Because the structure was discarded when the PDF was made. The converter rebuilds headings, paragraphs and tables by reading positions on the page, which works well on a cleanly exported document and less well on a complex layout. Expect to fix a few things rather than nothing.
What about scanned PDFs?
A scan is a picture of a page, so there is no text inside it to extract and these tools will hand back an empty document. Run it through OCR first — that recognises the characters and adds a real text layer, after which converting behaves normally.
Which format should I pick?
Pick by what you intend to do next. Editing means Word. Numbers mean Excel. Putting a page into a slide or a message means JPG or PNG. If you only need the words and nothing else, plain text is the format least likely to arrive mangled.
