These are page-level edits, and it is worth saying plainly what that excludes: none of them rewrite the words in a paragraph. A PDF stores text as glyphs placed at coordinates rather than as editable prose, so changing a sentence means reflowing everything around it — a word processor's job, not a PDF tool's.
What remains is most of what people actually want. Numbering a document assembled from four sources. Stamping a draft so nobody circulates it as final. Cropping the dead margins off a scan. Dropping a colour document to grey so it prints without draining a colour cartridge on a page of black text.

Can I edit the text inside a PDF here?
Not directly, and no browser tool does it well. Convert the file to Word, make the change where the text is real prose, then convert it back — the round trip costs some formatting fidelity but gets you a document you can actually edit.
Can a watermark be removed?
By someone determined, yes. It is drawn into the page like any other content, which makes it a deterrent rather than a lock. Flatten the file afterwards to make it meaningfully harder, and reach for a password instead if the requirement is genuine security.
Does cropping delete what falls outside the crop?
Not on its own. Cropping sets the visible box, and content beyond it is hidden rather than removed — which means it can be recovered. If the margins hold something that must be gone, flatten the document to raster after cropping.
